I discovered this tasty combination by randomly throwing together leftover vegetables. You need random amounts of:

pumpkin

potatoes

carrots

parsnip

parsley

Also:

vegetable stock

ground cumin

peanut butter

(some cream)

Cut. The secret to a good stew is that the pieces have roughly the same size, so they’ll cook evenly. Cook in vegetable stock for as as long as it takes for the bits to done, but they still have some snap left in them. Add a spoon of ground cumin. Add a spoon or more of peanut butter (preferably chunky). If you want to, add some thickened cream or sour cream. Or you can leave it vegan. Add the parsley ca. 5 min. before eating. Spice to your liking with salt and pepper.
